Cuban style Turkey

Here’s the recipe I promised earlier.  It’s from a terrific cookbook we have called “Memories of a Cuban Kitchen” by Mary Urrutia Randelman.  The book is a combination of traditional recipes, Cuban adaptations of recipes, and recollections of the author’s childhood in Cuba and Miami.  We love it!
